After the longest Monday at work in history, I was starving, tired and my entire body felt exhausted. This is when it would have been easy to go somewhere for fast food, but we all know the hard part about fast food is we inevitably feel even worse after eating it then we did before we took a bite.
I am fortunate because Brian has a great go-to meal that is healthy, easy and undoubtedly satisfying. Of course after completely cleaning my plate, I couldn’t have been in a better mood.
If you find yourself in a pinch, try this meal and you will soon be one the road to recovery in 20 minutes flat.
Sauté onion, green pepper, mushrooms (or your favorite veggies)
Add a can of diced tomatoes and a dash of Oregano
Throw in some bay scallops (or any protein you have in the house) and let the flavors come together
Top with parmesan cheese
