I finally got around to making one of my favorite snacks; my goat cheese bruschetta. I mentioned in this post how I couldn’t wait to relive my surprising invention. It is so good. We love eating it so much we just had the bruschetta for our dinner and paired it with a glass of wine or two. This meal was the perfect fun, no hassle meal to end the week with.
It is so easy. What you need:
- Loaf fresh Italian bread
- One clove garlic
- Olive oil
- Goat cheese
- Rosemary sprigs
- One anchovy (scary, I know…but so good)
Heat a skillet with olive oil and rosemary. Slice bread and place slices in hot oil and cook on each side until crispy. Blend in mixer half garlic clove, goat cheese and a little bit of olive oil (until creamy). Chop tomatoes and onion and place in a bowl. In mixer add the other half of garlic clove, anchovy and plenty of olive oil. Blend until smooth and add pepper to taste. Poor olive oil mixture over cut tomatoes and onion making sure to evenly coat them. Spread creamy goat cheese over your rosemary toast and spoon dollops of tomato and onion mixture on top. Slice basil and garnish. WARNING: This combo will create the perfect bite size treat. Enjoy!
