Brian and I love food. Eating it, making it, dining out at new restaurants and old favorites. But indulging regularly just isn’t healthy and to be honest it can get pretty expensive. So for the last couple years we have been working on balancing our eating-out habits, as well as trying to get a hold on weekly grocery shopping so we aren’t overwhelmed and have healthy, easy weeknight meals at the ready.
It took a lot of trial and error, but I think we finally figured it out. So I’m going to share what has worked for us, and hopefully some of it will work for you too! I know we all deal with the dreaded weeknight meals….and somehow we always end up feeling underprepared, like you aren’t eating healthy enough or dinner is so complex to make you end up eating late every.single.night.
Now Brian and I don’t have kids, so all we have to worry about is us. But I think this system would work for families and those singles out there, you just have to adjust the quantities and use what you and your family like.
We decided to leave weekends for more complex recipes and for the casual dinner-date out. For weeknight meals it all started to fall into place after we found staples we liked to eat, felt good about and that we could cook in different ways. We knew we wanted to balance our diets, so we decided to focus our weeknight meals around being low carb, high in protein and veggies.
With that said, lets focus on mastering grocery shopping for the week. Brian and I shop every Sunday and we find that if we don’t get it done over the weekend our eating habits get all out of whack.
MASTERING THE WEEKLY GROCERY HAUL
It seems like a lot for one week and sometimes these items do flow into the next week, but we find if our kitchen is stocked with these items, we are eating healthy and we have a lot of easy go-to meals for the week ahead.

Chicken lettuce cups, with cheddar cheese, avocado and hot sauce
Scallops over a sweet potato puree, topped with onion jam and bacon
Salmon in a lemon sauce with baby broccoli
Sausage with sweet potato nuggets
Spinach salad with lemon dressing oven roasted tomatoes, avocado and goat cheese
Chopped chicken salad
Zucchini soup with a side of sweet potato nuggets
Chicken breast smothered in a mushroom sauce with pureed cauliflower
No carb, zucchini pasta with homemade sauce
