I love eating with my fingers, and last night’s meal made it more fun than usual. The meal was so satisfying because of the perfect flavor combination, I felt like I could have been eating at a fancy restaurant. This meal was inspired by a hot spot located in a Chicago suburb called Zaza’s. They have the best stuffed artichokes. Me, being an artichoke lover, I was craving this meal and was thrilled when I realized how easy it was to recreate in my own kitchen.
To cook the artichoke:
Prepare by cutting off stems and clipping leaves.
Place artichokes in a baking pan and add a little water, a bay leaf, couple cloves of garlic and a lemon slice or two. Cook covered for 1 hour and 45 minutes. Baste occasionally.
Prepare sauce, Emeril Lemon Butter Sauce
After artichokes are cooked and cool enough to handle, drain liquid from pan, fill artichokes with bread crumbs and be careful not to add too many or you will dry them out. Pour sauce over the stuffed artichokes making sure to get in between all of the leaves. Bake at 400 degrees until bubbly and starting to brown.
Remove, plate and enjoy!
