Festive Spiked Snow Cone

Brian and I love, love fresh tasting citrus drinks. We wanted to find an easy drink with a fun twist for the holiday season.

After tinkering around on Sunday and combining a few recipes, I think Brian nailed it. We called it The Spiked Snow Cone. We both felt like kids sticking our faces in a glass filled with crushed and a little happier after we tasted how delicious it was. It perfectly combined playfulness and the easy (to drink and make) factor.

makes 1 cocktail

¼ Cup Gin
1 Tablespoon simple syrup
½ teaspoon white balsamic vinegar
2 (½”) lime wedges
2 (½”) cucumber wedges + 1 sliced round for garnish
Ice // crushed (we blended ours in the blender until fine)

Place limes, cucumber, simple syrup and vinegar into a cocktail shaker. Muddle the limes and cumbers. Add the gin and shake in a cocktail shaker, then pour into a Tom Collins glass. Fill the glass half way with crushed ice and stir (this should dissolve most of the ice). After ice is dissolved, pack the glass high with crushed ice and garnish with a cucumber round.
