Happy Friday! Summer is winding down in other parts of the country, but it has been blazing hot here in sunny CA. September is known to be the hottest month of the year and this year it rings to be true. Lately, with the air conditioner constantly on, and the fact that I’ve been finding myself mid-day ducking indoors to avoid the scorching sun, this drink seemed fitting to end the summer with. We used an old family recipe and tweaked it to make it our own. Drink up and imagine yourself on a beach, or maybe you’re already on a beach…either way, enjoy the last weeks of summer!
BANANA DAIQUIRI
recipe makes two cocktails
What you need:
3 cups ice
2 teaspoons lemon juice
2 teaspoons lime juice
2 small jiggers rum (preferred Myers’s Rum)
3 large jiggers pineapple juice
1 ripe banana
Process:
In a blender combine, ice, banana, lemon and lime juice, rum and pineapple juice. Blend until smooth and thick. Pour into your favorite glass and garnish as desired. For the last touch, finish with a splash of rum on top.
**for a creamy consistency you can had 1-2 tablespoons heavy cream to blender.
Nice! Makes the hot weather almost worth it!
