This weekend it’s time for a cocktail, and I’m pretty positive you’re going to love this one.
Recently, this drink has been a new favorite of mine. I first tried a Bee’s Knees at a local restaurant, Son of a Gun and was determined to recreate it at home. The waitress said, “Gin, honey and lemon juice are all you need.” So, I of course, took her literally and grabbed my Gin, squeezed some honey in the shaker and poured some fresh lemon juice over the ice and gave it a shake.
Yeah, no, didn’t turn out. The honey got all cold and clumpy and it was a disaster. I thought to myself, “No kidding, Jen, why did you think this was going to work?” Trying not to get too frustrated, I resorted to Google and quickly realized I needed to make **honey syrup, and the rest would be a peace of cake.
Done and done and the drink was amazing! This cocktail is sophisticated, so it will impress your guest’s if you are planning on having some friends over, and it is easy, making it a great cocktail recipe to have in your back pocket for those impromptu get-togethers. I’ve been treating myself to a Bee’s Knees, as well as sharing it with friends, and I think you should too.

THE BEE’S KNEES COCKTAIL
What you need:
2 oz. Gin (I also like Hedrick’s and Death’s Door)
3/4 oz. honey syrup**
1/2 oz. lemon juice
In a cocktail shaker combine Gin, honey syrup, and lemon juice, and shake well with ice for a few seconds. Strain into an your favorite glass!
Combine equal parts honey and water in a saucepan. Heat until thoroughly mixed. Cool and refrigerate. The syrup will be good for up to six months.
Mix it, and pour!
